Cauliflower Tacos

Bonjour! 

How do tacos sound for dinner? Good? I love love love fajitas, enchiladas and tacos

A lot of people have started talking about using cauliflower as carb substitute for their low-carb lifestyle. What have they been disguising it as? Simple, cauliflower can pretty much take the role of anything you can think of, just to name a few examples… here it goes: breadsticks, buns, pizza crust, quiche, couscous, rice, tortilla, bagels, hash browns, nachos and many more!

Isn’t it amazing?

I feel like someone has found a secret ingredient that can make all the really yummy unhealthy stuff a perectly guilt – free indulgence 🙂

Since I have been craving them for quite some time now, I have decided to make tacos 

Cauliflower TacosTaking the cauliflower apart and just keeping the “cauliflower flowers” in a bowl is your first step 

After a short microwace vacation the cauliflower gets drained of all its juice

Mixing it with some spices and eggs and they are almost ready to be put into the oven 

Take about a small fist-size of cauliflower and press it into small circles

When the time has come to take it out of the oven and flip the side, I suggest using a plate. Otherwise, it might fall apart since it is not soooo flexible and compact

There are so many different options to put in your taco

I prepared my go to fillings:

  • quacamole with tomato cubes 
  • some chicken with mustart-honey glaze 
  • bell peppers, spicy pepper and some green lettuce

I didn’t make a sauce because I am a guaca-holic and usually put a ton on my food making a sauce superfluous 

Pick and choose your own favorite ingredients and enjoy your low-carb dinner! or lunch!

Cauliflower Taco

Ingredients
  1. 2 cauliflower
  2. 1/4 tsp salt
  3. pepper and paprika powder (according to your liking)
  4. 350gr chicken
  5. 2 Avocado
  6. 1 big tomato
  7. 4 Eggs
Instructions
  1. cut the flowers of the cauliflower off and put it into a bowl
  2. microwave it for about 3 min
  3. mix it with a fork and put it another 3 min in the microwave (it makes the cauliflower soft and much easier to drain the liquid afterwards)
  4. with a towel drain as much liquid as you can
  5. add the spices, salt and eggs to it and mix well
  6. form small circles
  7. put them into the oven for 10min on 200°C
  8. flip them with the aid of a plate and put them another 8min into the oven
  9. Prepare the ingredients you have decided on for the filling while you are waiting for the tacos to be ready
